摘要:L'olivier est le principal système agricole producteur d'huile dans la région Tadla Azilal (Maroc)(La production oléicole de la campagne 2010 -2011 a atteint 156.719 tonnes). A Béni Mellal, l'oléiculture constitue un des piliers de l'économie rurale et où la production d'olives est destinée principalement à l'extraction d'huile. Dans cette région, la Picholine marocaine est la variété la plus do minante.Elle représente 84% de la superficie cultivée [1]. Dans ce travail, nous nous sommes intéressés d'une part à l'évaluation de la qualité de l'huile d'olive de la Picholine marocaine cultivée dans la région Tadla Azilal (Maroc) et triturée par un seul système d'extraction en se basant sur des analyses physicochimiques concernant l'acidité libre, l'indice de peroxydes, la mesure des valeurs standards d'absorption UV et la teneur en polyphénols totaux et d 'autre part, à l'étude de l'effet du terroir sur ces même paramètres. L'évaluation des critères de qualité des huiles étudiées, selon la norme commerciale du Conseil Oléicole International, nous a permis de les classer dans les catégories d'huile d'olive vierge à extra vierge. Les résultats trouvés ont permis de mettre en évidence que les principaux critères de qualité de l'huile d'olive tels que l'acidité, la teneur en polyphénols totaux sont for tement influencés par la zone de culture. D'autres paramètres comme l'extinction spécifique à 232 et 270 nm ainsi que l'indice de peroxyde s ne présentent pas de différence significative pour l'effet de la zone de culture
其他摘要:The olive tree is the principal producing agricultural oil system in the Tadla-Azilal area (Mo rocco). The olive growing constitutes one of the pillars of the rural econo my in Beni Mellal, and the production of olives is intended mainly for the o il extraction. In this area, the Moroccan Picholineolive is the most dominant variety which counts for 84% of the acreage [1]. In this work, on the one hand we are interested to evaluate the quality of the olive oil of the MoroccanPicholinevariety from the Tadla Azilal area (Morocco) triturated by only one system o f extraction, while basing ourselves on physico -chemical analyzes relating to free acidity, the peroxide index, the measurement of the standards values of UV absorption and the total polyphenols content, and on the other hand, to study the effect of the growing area on these parameters.The evaluation of the quality standards of the oils studied, according to the International Olive Oil Council, has enabled us to classify them in the categories from virgin olive oil to extra virgin. The found results made it possible to highlight that the principal quality standards of the olive oil such as acidity, the total polyphenols content are strongly influenced by the growing area. Other parameters like the extinction specific at 232 and 270 nm as well as the peroxide index do not present a significant difference for the effect of the growing area
