摘要:One of the largest recent changes in consumer food purchasing is the trend towards greater consumption of food eaten outside the home. Between 1960 and 1994, the share of total food expenditures spent on food away from home (FAFH) went from 27 to 47 percent (Manchester and Clauson). For the five years from 1987 to 1992, sales of all types of FAFH increased 32.2 percent, while the number of eating establishments increased 14 percent (U.S. Census of Retail Trade). Factors such as rising family incomes and increasing female labor participation have contributed to this trend.
