摘要:Maize meal accounts for up to 50% of low-incomehouseholds' expenditures in Kenya. And about halfof the cost of maize meal over the past decade hasbeen accounted for by processing and distributioncosts. Thus cost reduction in the milling anddistribution of maize meal can greatly affect accessto food by low income consumers, both in urbanand rural grain-deficit areas. While the quest forproductivity gains in the food system has typicallyfocused on farm technology and related adoptionfactors, this paper emphasizes the importance ofreducing per unit costs (increasing productivity) atcritical stages in the marketing system to promotehousehold food security and production incentives.
