摘要:In this study, water soluble dry matter, pH and titretable acidity (anhydrous citric acid) parameters sugar and organic acid contents of Hicaznar pomegranate cultivar, grown in Turkey, were determined with respect to harvesting time. Samples analyzed in this research were harvested at five harvesting period, and there were statistically significant differences in all determined quality parameters depend on the harvesting times. Citric, malic, oxalic and tartaric acid content of the samples were ranged from 6.70-10.19 g/L, 0.28-0.48 g/L, 0.23-0.41 g/L, 0.030-0.090 g/L respectively. Fructose, glucose, sucrose and maltose were changed in a range of 7.69-8.34%, 5.44-5.7%, 0.08-0.19% and 0.59-0.68% respectively. Research findings showed that, sugar content of pomegranate juice increased, in contrarily acidity of the samples decreased over the harvesting periods.
