  • 摘要:Dairy products are in the main food commodities that frequently condemned as the source of foodborne infections and intoxications where the non-standardized manufacturing conditions applied. Staphylococcal intoxications are in these foodborne diseases and caused by the ingestion of food that contains one or more enterotoxins. To study presence of S. aureus enterotoxins in various cheeses sold at retail markets of İzmir city a total of 75 samples composed of kashar cheese, Erzincan and Izmir tulum cheeses, white cheese (feta cheese), örgü and Van otlu cheeses were analyzed. Enterotoxin analyses were performed with Ridascreen Elisa kits. Enterotoxins were detected in 27 samples and the distribution of toxins were in the order of SEA (19 samples; 67.86 %), SEB (9 samples; 32.14 %), SEE (7 samples; 25.0 %), SEC (2 samples 7.1 %) and SED (1 sample; 3.6 %). Results showed that cheeses especially that made from raw milk would pose a staphylococcal intoxication risk to public health that is why great attention should be given to good manufacturing practices in dairy plants.
