  • 摘要:Polycyclic aromatic hydrocarbons ( PAHs ) are pollutant of environment formed by the pyrolysis of organic matter, in particular from fosil , fuels and some food materials. In nature, they are exist in environmental source such as atmosphere, water and soil. Foods have exposed to PAHs by direct contact to these sources or due to improper cooking procedures. Those PAHs are harmful to human health as teratogenic , mutagenic and cancerogenic effects. In this article, it was examined the presence of PAHs in nature, their harmful effects to human health and the effects of cooking procedures on their formation.
