摘要:In this research, the effects of storage temperature (4 and 10 oC) and different atmosphere conditions (air, vacuum, 100% CO2, 2.5 %O2- 7.5 %N2-90% CO2, 30% O2-30% N2-40% CO2) on total bacterial flora and color values were investigated. Storage time, atmosphere and storage time atmosphere interaction were important (p<0.01 )on total bacteria count determined at 4 oC with two different incubation temperatures (3 days at 25 oC’ and 2 days at 37 oC). There were significant effects (p<0.01) of storage time and atmosphere conditions on both L* and a* values. However there were no significant (p>0.05) effects of both factors on b* values of fillets. When storage time 10 oC, the effects of storage time and atmosphere factors on total bacteria count were significant (p<0.01), but the effects of storage time x atmosphere interaction was not important (p>0.05). The effects of storage time was significant (p<0.01) on L* values of fillets, however there were no significant effects (p>0.05) of atmosphere and storage time x atmosphere interactions on this values. The effects of main variation sources on a* and b* values of fillets were insignificant (p>0.05).
