摘要:In recent years, it was observed that the production of aseptic fruit juices has been increased. Between other fruits, apple takes the fist place in fruit and fruit juice production in our country. Also the share of exported apple juice concentrate was approximately 69%. Processing of apple juice under HACCP that is a valuable tool in assuring the highest quality and safety to customers provides constructive contributions to both industry and international trade. This study explains the implementation of HACCP in aseptic apple juice that was produced from concentrate.
