  • 摘要:In this study some characteristics of pectin methylesterase (PME) from cucumbers were determined. PME from cucumbers was very heat stabile below 60 °C and showed activation at 55°C. However, it showed rapid inactivation at 80 oC and 90 oC. The optimum temperature and pH of PME activity were 60°C and 9.0, respectively.
