  • 摘要:Xerotolerant yeasts are the microbial contaminants widely found in intermediate moisture foods (IMF), in addition to cause economic losses by food spoilage the health problems which yeasts are the causative agents, have gained importance in recent years. In this review, the importance of xerotolerant yeasts in high-sugar products is pointed out.
