摘要:Hazelnut is an important agricultural product for Türkiye. Determining guality losses in hazelnut and preventive measures is important to achieve and maintain high guality products. Microbial activities and chemical/biochemical reactions contribute to the shelf life of the hazelnut and its products. Microbial activities may bring about significant guality losses as a result of insufficient/inadeguate harvest, drying and storage methods and conditions. Moreover, cracking, roasting, packaging and transportation may bring about lipid oxidation and subseguent rancidity in hazelnut and its products. The best guality can be achieved only if ali operation stages are optimised to obtain premium guality and are monitored through a guality control system to ensure the desired guality.
