  • 摘要:In this research, total of 15 yeasts were isolated from Kombucha tea. Identification results showed that 8 species of Saccharomyces cerevisiae, 2 species of Candida krusei, 2 species of Kloeckera apiculata and 1 species of Kluyveromyces africanus. Inhibition activity of the yeasts against some contaminants and pathogen bacteria ( E. coli , S. aureus, P. aeroginosa and Y. enterocolitica) were determined by agar diffusion method. Results showed that some of the strains were produced antimicrobial activity of S. aureus. It was observed that the other yeast strains were not inhibited the others test bacteria.
