摘要:The components known mixture are perfectly separated by means of chromatographycal methods into their sub-components. Recently the using of capillary columns in gas chromatography (GC) have been widely increased due to the power of separation. In this study, cis-trans isomers of fatty acids in various oils and fats (refined corn oil, natural olive oils, natural sesame oil refined sunflower oil, butters) were analyzed by means of two different capillary columns (J&W DB-23 and HP-5) in gas chromatography (HP-6890 GC). It is known that the levels of trans-fatty acids in oils are of importance as a risk factor with reference to cardiovascular diseases on the part of the medical world. Dietary trans-fatty acids have been shown to increase plasma LDL cholesterol by means of various clinical investigations while decreasing plasma HDL cholesterol levels. HP-5 column could not separated trans-fatty acids and some cis-isomers of tatty acids such as the separation of linoleic acid and linolenic acid. It is clearly showed that DB-23 column has more effective and the high resolution than HP-5 column. With respect to the analysis results, levels of trans-isomers of myristoelaidic acid (C14:- t), and palmitoleic acid (C16:-, t), elaidic acid (C18:1 t) and total trans isomers of (linoleic and linolenic acids (C18.2 t + C18.3 t) for butter samples were within the ranges of 0,67-0,91 %0,29-0,23%, 0,65-1,64% and 0,14-0,28% respectively. For vegetable oil samples those values except myristoelaidic acid (C14:- t), are ranged amongst 0,005-0,03%, 0,009-0,05%, 0,08-0,34% respectively. In addition, the highest level of elaidic acid in the analyzed oil samples was found as 1,64% in butter sample.
