  • 摘要:Lipids are the most important components of milk. The role of lipids in the organism is highly varied. The main functions are to participate in the formation of cell wall, to provide energy and to include enzymes and hormones. Some of the deteriorations can be occurred in lipids and lipid containing food materials during the storage period. In this article some of the information about the structure of the lipids and lipolysis and lipid oxidation events occurred during the storage period was given.
