  • 摘要:in this study, contents (mg/kg wet wt.) of nitrate were determined by enzymatic reduction (Boehringer Mannheim GmbH.) method in samples of fresh vegetables and fruits grown in Ankara in 2000. N03 contents of fresh vegetables ranged from 0.00 to 3019.41 mg/kg and contents of fresh fruits ranged from 0.00 to 126.19 mg/kg. The highest nitrate levels were observed in celery (3667.40 mg/kg), rocket (3019,41 mg/kg) and chard (2621.79 mg/kg) samples. Low nitrate levels were found in melon (0.00-47.93 mg/kg), watermelon (47.21-126.19 mg/kg) and some fruit-vegetables like as carrots (0.00-47.71 mg/kg) and tomatoes (0.00-71.10 mg/kg).
