  • 摘要:In this study analysis of dry matter, total sugar, ash, total acid, volatile acid, pH, ethyl alcohol and methyl alcohol were carried out on bozas supplied from different markets in İzmir. The results reviewed to the boza standard of Turkish Standards Institution.
