  • 摘要:Bitterness in citrus juices is an important problem. Naringine and limonine are two primary bittering components. Different methods have been employed for debittering of citrus juice. This review aims at presenting biochemical basis of bitterness in citrus juice. Furthermore, different physicochemical and biotechnological methods used for debittering are discussed.
