  • 摘要:Present article represents studies on application aspects and effects of high hydrostatic pressure in food systems. Considering today's preference as the consumption of natural or poorly processed foods, the processing of food under high pressure without loosing its nutrients and taste and also without use of chemical preservatives find a wide spread application. Main target of researchers is to investigate the optimum conditions for high hydrostatic pressure applications on biological systems.
