  • 摘要:The antimicrobial properties of hydrogen peroxide have been recognized for 100 years. It has been commonly used for the disinfection of medical equipment and supplies. The food applications of hydrogen peroxide are fairly new. As a GRAS substance, it has been particularly used as a disinfectant for aseptic packaging materials and equipment. In fruits and vegetables, hydrogen peroxide in aqueous of vapor phase has been strongly recommended as a surface sterilant in place of chlorine. Recent studies clearly show the potential applications of hydrogen peroxide in foodstuffs.
