摘要:Numerous studies have been devoted to ascorbic acid degradation. The loss of ascorbic acid itself is not the only reason of these studies. This is probably because a variety of products are formed during the degradation of ascorbic acid and these products may initiate new reactions. In this review, the mechanism of ascorbic acid degradation and the products formed during these reactions were studied.
