摘要:in this study, sugar contents of sugar honey, honeydew honey and multifloral honey were determined by HPLC method in order to identify the honeys from each other. Fructose is the highest sugar in all samples (39.42-42.20%) followed by glucose (29.61 -33.48%). Additionally sucrose, maltose, galactose, ribose and xylose were determined in all samples as well. Total sugar content ranged between 75.67-78.40% in honey samples. Some sugar contents of honey samples showed significant (p<0.05) differences than the others. Sugar honey with high glucose content was unique. However, by using sugar content the Identification of the origin of honey was impossible.
