摘要:Oil contents and fatty acids composition of eight walnut types grown in the coast of Van Lake were investigated during the fruit development period. For this purpose, oil contents and fatty acids composition of walnut samples taken from trees by different intervals in three districts around Van Lake (Edremit, Gevaş and Ahlat) were determined. Oil contents of walnuts have increased as kernels develop and reached is maximum at the date of harvest maturity. These increases were statistically significant (P<0.05). While palmitic acid (16:0) content was decreasing, stearic acid (18:0) content increased in the fruit development period. Linoleic acid was the main unsaturated fatty acid (%44.67-53.27) followed by oleic (%24.85-36.37) and linolenic (%9.11-13.89) acids at the harvest time. Oleic acid (18:1) content increased regularly during the fruit development period. in this period, linoleic (18:2) and linolenic (18:3) acid contents decreased opposite to oleic acid.
