摘要：In this study, effects of temperature and time on soluble solids extraction in dried mulberry were determined. The relation between extraction and temperature was described with Arrhenius equation. Activation energy values, which depend on extraction replicates, have showed changes between 164.232-0.787 kcal/g.mol. In addition, values of 1/T.103 at 293°K, 323°K and 358°K were found as 2.79, 3,09 and 3.41, respectively.
