  • 摘要:Coliform group bacteria and E. coli were counted in minced beef, hamburger and soudjouk samples by MPN method by using LST+MUG broth. Additionally, total 3150 Enterobacteriaceae members were isolated from 255 raw minced beef, 103 raw whole milk, 150 uncooked hamburger and 101 soudjouk. 2902 of them were identified. According to results, coliform group bacteria counts were 0-2.1X102 MPN/g in minced beef, 0-1.5X102 MPN/g in hamburger and 0-4.6X102 MPN/g in soudjouk. E. coli counts were 0-4.3X102, 0-1.5X102 MPN/g, 0-2.4X102 MPN/g respectively. E. coli type 1 (1067 isolates), Hafnia alvei (707 isolates), Citrobacter freundii (404 isolates), Proteus vulgaris (126 isolates) were dominant flora according to Identification results.
