  • 摘要:Flat breads are widely consumed in Middle East and North Africa including Turkey. Flat breads differ from pan breads also called west type breads and have a high specific volume. Flat breads are baked with traditional methods and produced in limited amounts on the contrary to automation and advanced processing technologies of pan breads. In this article, types of flat breads, the factors effecting their quality and the evaluation criteria of these types are reviewed.
