摘要:Each year a large amount of animal fats have been imported to Turkey in order to be used in food, cosmetic, textile, detergent, pharmaceutical and other chemical industries. However there is not any method to determine the purity of the animal fats which are either imported or produced locally. Thus the present study has been planned to overcome this deficiency. For this purpose, pure beef tallow and mixture of beef tallow with various ratios of lard have been analysed by gaschromatographic (GC) method. The changes in general and 2-position fatty acids have been studied in relation to the increase in lard content. The results show that a method based on GC can be applied for determination of lard in the beef tallow.
