  • 摘要:Nowadays, the traditional baker’s strains have become inadequate to satisfy the baker’s diverse needs. Strain improvement programs to better quality, for both consumer and manufacturers, by using genetic engineering techniques have been developed. In this review, the possible targets of these programs are summarized.
