摘要:This study was carried out to determine the chemical composition of different varieties of hops used by brewing industry in Turkey. The composition of hops was dependent on the variety. Gallena and Northem Brewer varieties contained the highest levels of bitter and aroma substances. Brewers Gold and Late Cluster showed high acid but low ethereal oil contents. Efes Aroma and Saaz had high levels of aroma components and these varieties had high amounts of bitterness substances as Brewer Gold and Late Cluster did.
