摘要：In this paper, antimicrobial matters which are used to prolong resistance times of foods and possibilities of using these matters in milk industry are discussed. Although it not allowed in our country, the usability antimicrobials in Turkish milk industry that has some problems from production to consumption is examined. Using rates and technological characteristics of some antimicrobials which are used in developed countries have been compiled from different studies.
