  • 摘要:Forty cheese samples were bought in. Ankara market. Twenty of them represented for unripened cheeses bought in June. The other twenty samples represented for ripened cheeses bought in November. Proteolysis level of cheeses were determined using chemical and organoleptic properties of samples. Analyses of the cheeses showed that there weren’t important difference between June and November. Because cheeses had very different quality in different seasons.
