  • 摘要:The mesophile flora of white cheese at the same produce conditions can show variability depend on different factors. At this reason 12 series (132 samples) white cheese were fresh cheese and ten weeks ripening period were studied in this period coliform, streptococcus, LLP, S. aureus and bacilli were determined in the each of white cheese samples and means of bacteria were taken and than the percentage of distributions were designated. The means of LLP and streptococci were high in all series of fresh cheese and ten weeks of ripening periods. In determining of all series S. aureus and coliform bacteria were found in undesirable flora of cheese were grown in fresh cheese and ten weeks ripening periods. The percentage of distributions of the bacteria groups isolated from 12 series was determined LLP group of bacteria and streptococci were grown higher than other groups. In spite of coliform, S. aureus and bacilli in some series were grown rather high percentage.
