摘要:Specifications of enzyme catalase produced by Debaryomyces hansenii strains which have been isolated searched by polargraphic method. Catalasa activities of strains which were included in the experiments were tested and then the relation of glucose, H2O2 concentration in the ingredient and growth phase was enzyme activities which are in frozen yeasts cells and fresh yeast cell have been compared. It has been observed that, catalase activities depend on the increase of cells and rise at the beginning of stationary phase period when the amount of H2O2 concentration is 0.28 mol/l and the around of glucose is 0.1% in the ingredient the catalase activities reaches the highest point moreover, it has been found that catalase activities in frozen cells in high.
