  • 摘要:In this research, the color of wheat determined by Gardner Color Spectrofotometer and visually. High and statistically significant correlations were found between the color parameters (L and b) from the instrument readings and the visual color score. Hard red wheat was distinguished from the soft while wheat by its low b value. The regression relations between Hunter readings (L and b values) and visual color score were used to from a conversion chart to make the instrument readings more meaningful. The low relations between instrument readings and the some quality criteria (protein content, sedimentation value and hardness) indicated that it is impossible to predict the wheat quality by using color score.
