摘要:In this study, in order to measure more accurately the colour and colour difference values of fruit and vegetables, the Minolta and Hunter colour values of tomatoes, bananas and apples were compared. Tomato fruits were harvested at six different ripening stages based on skin colour such as, mature green, breaker, turning, pink, light red and red. Banana fruits at second (green), fifth (green/yellow), sixth (yellow) and seventh (pale yellow) stages of ripening were obtained from market. Granny Smith (green), Golden Delicious (light green), Gala (pink/light red) and Red Delicious (Red) varieties of applies also obtained from market. There were no differences between Minolta a*/b* and Hunter a/b and Hunter a/b values of mature green and breaker stage of tomatoes and either Granny Smith or Golden Delicious varieties of apples. The difference between Minolta a*/b* and Hunter a/b values increased with increasing redness of tomatoes and applies. Minolta b* and Hunter b values of bananas increased parallely to each other from the second to the sixth maturation stages. After the sixth stage they started to decrease parallely again.
