摘要:Yoghurt samples were obtained from different regions of Turkey 81 Lactobacillus strains have been isolated and identification results showed that 73 strains belong to Lactobacillus bulgaricus . Amount of total acidity, proteolytic activity and acetaldehyde production by the identified strains were ranged between 0.64-2.34%, 0.007-1.273 mg tirosin/ml and 1.95-12.59 m g/ml respectively. Antimicrobial activities of the strains were applied on test bacteria Escherichia coli, Staphylococcus aureus coag. (+) and (-). The strains were inhibited test bacteria by the half diameter of inhibition zones ranged between 3.2-19 mm, 3.2-17 mm and 3-19.2 respectively.
