  • 摘要:In this study, the physical, chemical and polynological properties of 25 honey samples taken from various regions of Turkey; have been investigated. In these samples, values for brix, moisture, acidity, total and reduced sugar, sucrose, hydroxymethylfurfural (HMF), prolin, potassium and sodium content have been determined. As a result, it has been found that the ratio of potassium to sodium, prolin content and total pollen spectrum are important criteria, and these criteria are useful to distinguish natural honey from honey that is produced by the over-feeding of bees with sucrose. The other criteria, such as acidity, sucrose, and reduced sugar content, etc. Can also be useful in this research.
