摘要:In this paper controlled and modified atmosphere storage and their application, advantages and disadvantages are reviewed. The effects of oxygen, ethylene and carbon dioxide on fruits and vegetables are well known. Respiration and ripening rates, storage life, production of ethylene, formation of undesirable flavours, development of some physiological disorder and fungal growth of fresh fruits and vegetables are affected by high carbon dioxide and low oxygen levels during controlled or modified atmosphere storage. Effective controlled atmospheres requires an adequately specified gas removal systems and storage environment.
