摘要:Surimi is, processed type of mechanically deboned fish meat and it has functional characteristics such as gel forming ability and water and fat binding ability. Surimi processing technology includes, washing process of minced fish for making pure and thickening the muscle proteins and then addition of cryoprotectans for freezing and storage. Surimi, kind of raw material, can be used for producing foods such as imitation shell sea foods, sausage, ham, meat balls and burgers.
