  • 摘要:Declining calf slaughter has resulted in a word-wide shortages of stomach as a raw material for rennet production. These factors contribute of the world-wide research for animal rennet substitutes of microbial or plant origin. In this study, some work of rennet from different origin have been reviewed the commercial importance, recent technical developments and future of the major coagulating enzymes in cheese making.
