In this article the area of use of electroplasmolyzators in food industry, factors effecting electroplasmolyses and the classification of electroplasmolyzators have been studies. Electroplasmolyzators can be classified as their gradient potential, frequency of electrical flow; way of substrate feeding, number of electric phase, continuity of electrical operations, parameters that can be controlled, movabilitiy of the electrode and the structure of the electroplasmolyzators (box type, waltz type, pipe type, package type, pin type, spiral type).
