  • 摘要:Protein in the hen eggs is known as high quality protein source. Besides, eggs, contain vitamins such as A, D, Ev ek, K, B (except C) and the other substance influential on human growth for instance, Ca, Zn, Fe, P, I, F, Na, K, Cl, Cu, S, Mg and Mn. In this research, the eggs have been identified within the microbiological framework. Therefore, total bacteria and mould-yeast counts have been realized. Especially, total bacteria and mould-yeast have been found in egg-shell which known to be the dirties part. Sometimes a small amount of contamination has been found. Although, it is widely accepted that inside the shell, egg is sterile.
