  • 标题:A Study on the Some Physical and Chemical Characteristics of Honey Samples Collected from Van City Market and Their Comparison with the Related Standard

  • 摘要:In this study, 20 honey samples were obtained from Van city market, and their some physical and chemical analysis were carried out. The following results were found from chemical analysis; dry matter 82.20%, water 17.80%, ash 0.18%, total sugar 76.33%, invert sugar 72.77%, sucrose 3.56%, pH value 4.11, HMF value 25.87 mg/kg, total nitrogen 0.07%, and total acidity (titratable acidity) 24.61 meq/kg. The samples of 1, 2, 12, 13, and 14 have given orange color reaction for Fiehe test, and red color was observed for 15th sample in result of commercial Glucose test. Label information was not enough for majority of honey samples. Finally, packaging properties and undesirable matter content of samples were acceptable when compared with the related standard.
