摘要:In this research, the effects of packaging material, storage conditions and time on the quality of refined sunflower oil with added antioxidants were determined. Oils in tin can, PET and glass bottles of 11 capacity were obtained from a commercial oil plant. Half of the PET and glass bottles were completely covered with aluminium foil prior to storing all samples before window receiving sunshine and under diffused room light for 5 mo. (June to October). Samples were subjected to Peroxide Value (PV), free Fatty Acids (FFA) and Kreis tests prior to storage and 1 mo. intervals. Results showed that packaging material and storage time had a significant increasing effect on PV and FFA contents whereas the effect of storage conditions was insignificant. However the highest PV and FFA contents (5.09 me/kg and %0.07 oleic acid, respectively) obtained were found to be much lower than the maximum allowable PV (10 me/kg) and FFA (0.3%) values in the Turkish Standard of Sunflower Oil for commercial sale. The Kreis test results of all samples were found to be negative.
