摘要:This study has been undertaken to determine the bacteriological quality of ice-cream consumed in Eskişehir total of 23 ice-cream samples were collected from May-August 1992. Ice-cream samples were analysed for their total aerobic bacteria number, psycrophylic bacteria, coliform, E. coli, S. aureus , fecal Streptococcus , yeast and mould counts and for the presence of Salmonella and Shigella bacteria. As a result, the bacteriological quality of ice-cream which were consumed in Eskişehir were determined to be unacceptable.
