摘要:In this study, organic acids were determined in 23 different samples of fermented sausages. The total amount of organic acid was found 11.86-46.312 g/kg, lactic acid 6.11-36.41 g/kg, glyconic acid 1.90-7.48 g/kg, acetic acid 0.96-5.47 g/kg and also 0.13-0.25 g/kg of pyruvic acid was determine in only 4 of the some samples.
