  • 标题:A Study on the Determination of Physical and Chemical Properties of Crude Sunflower Oils and Soybean Oils Imported to Tekirdağ Harbour

  • 摘要:In this study, crude sunflower and soybean oils imported from five different country were analysed. The results of physical and chemical analyses of the oil samples showed that average refractive index of sunflower oils is 1.4776, specific gravity 0.92; iodine number 117, saponification value 191, free fatty acid 1.11%. On the other hand, the soybean oils; average refractive index is 1.4772, specific gravity 0.928, iodine number 126, saponification value 193, free fatty acid 1.00%. Gas chromatographic analyses of the sun flower samples showed that the fatty acids compositions were consisted of 0.046% myristic acid, 6.93% palmitic acid, trace palmitoleic acid, 4.46% stearic acid, 26.13% oleic acid, 62.08% linoleic acid, 0.34% arachidic acid. The soybean oil samples showed that the average fatty acid composition were consisted of 0.11% myristic acid, 11.54% palmitic acid, trace palmitoleic acid, 3.81% stearic acid, 22.07% oleic acid, 55.2% linoleic acid, 7.10% linolenic acid. The results were in accordance with other researcher’s data.
