  • 摘要:Sorbic acid and its salts inhibit or delay the grown of bacteria. This inhibitory effects varies due to the species and the strains of bacteria resist to sorbate existence and are even able to metabolize sorbate. Inhibition of bacterial growth by sorbate may result from alteration of cell membranes, inhibition of transport systems and key enzymes, creation of a proton flux into the cell.
