  • 摘要:In this research, fatty acid compositions of breeded rapeseed oil which has been thought its utilization as an edible oil in Turkey were investigated. According to the results; in rapeseed oils, palmitic acid 0.0-0.36%, stearic acid 0.05-0.35%, oleic acid 72.30-83.42%, linoleic acid 10.18-21.11%, linolenic acid 1.23-4.07%, eicosenoic acid 0.0-5.52% and erusic acid 0.0-3.01 % were found. In conclusion, erusic acid ratios of the examined rapeseed varieties were below the 5% level proposed by World Health Organization (WHO). Because of this, rapeseed oil could be used as on edible oil in Turkey.
