摘要：Proteolytic and lactic acid producing activities of single and mixed cultures of L. bulgaricus and S. thermophilus determined. S. thermophilus showed less metabolic activity than L. bulgaricus . Proteolytic activity of S. thermophilus was became higher by disodium glycerophosphate but lactose enzyme activity wasn’t effected.
