摘要:Use of activated carbon in apple juice concentrate producing is novel procedure in the world. In this research different amount of activated carbon were used under different procedural durations for improving apple juice concentrate (ajc) color. Apple juice concentrate color were improved with different amounts of activated carbon same procedural duration times. Improving ratio in color is differed between 24.30-136.18%, same amount activated carbon and different procedural duration did not change the color considerably. Optimum amount activated carbon is determined as 2.70 g Per liter and procedural duration is found 10-20 minutes. In apple juice under pH 3.5 color improving ratio is increased. In this case color improving ratio was 106.21% comparing blank sample. Use of activated carbon gave good results under laboratory temperature.
